Heat, oil and standing water

An outdoor kitchen puts three things on a floor that a patio does not: grease, dropped ice and the radiant heat of a grill. Oil is the one that stains permanently if it reaches an unsealed surface, so counters and the floor immediately around the cooking run get the same sealing schedule as a pool deck and want wiping rather than leaving.

Counter slabs are a structural question as well as a finish. An overhang needs support designed for it — a cantilevered slab edge is doing real work, and how far it can reach depends on thickness and what is under it.
